I've been on 6 tuna trips in the past and always used (with success) a rental rod where you just toss the bait when there is a hook up. I've always been envious of the fishermen who have their own setups and cast irons or sardines to where the fish actually are. I've booked a trip out of San Diego in September on a 22 person boat, and would love to try my hand at casting some irons/sardines on the trip.
We'll probally run into yellowfin/yellow tail, but I am having a hard time finding a recomendaiton on the right pole/reel setup...

That's a good reel (I like Daiwas), and it'll probably handle all your fishing fine unless larger bluefins show -- some years there are good bites on 50-100+ pound bluefins. If the ocean is overrun with small yellowfins (5-10 pounders) you could get away with lighter tackle, but the 30 pound line will do fine on them. It'll do fine for the albacore as well, but if it's a warm-water year, the albies might be long gone by September.
For a rod, I'd recommend a 7 footer like the Calstar 870c or 970c (http://calstarrods.net/westcoast.htm). 7 feet is long enough to cast a sardine decently, but short enough that an extended fight with a large fish won't hurt you. There are other good brands, but basically what you're looking for is a fast action 7-foot conventional rod made for 15-40 or 20-40 pound line.
Except when the little yellowfin are berserk, I haven't had much success offshore with surface irons, but I've done plenty of damage with heavy yoyo irons. For tuna, chrome finish is the way to go, with jigs like the Tady 9 or the Salas 6xJr; for yellowtail painted jigs (brown/white or blue/white), the same models (though my biggest offshore yellowtail, 34 pounds, ate a chrome jig). You don't need a long rod to cast a 4-6 ounce jig. Cast it out with the wind at your back (the opposite side of the boat from the bait fishermen), let it sink 30-60 seconds as the boat drifts towards it, then bring it up fast. If the fish are near the surface, start cranking as soon as the jig hits the water.
Actually, if you're renting a heavier (40-50 pound outfit) as a backup, use it for the jigs, and use your 30-pound rig for bait. You can get away with heavier line with jig fishing, and it's easier to keep it rigged than to switch back and forth.
Make sure you watch the catch counts in the days and weeks leading up to your trip so you'll know what to expect. There's plenty of info available online.
